The yellow car has mesh. Find a larger version of that image and you can see it. They all have the mesh.
Also, the orange car is an artists' rendition and not a photo. The production cars have a much more transparent mesh.

It might be a production change, the concept's/#001's mesh might not provide enough cooling so they're changed to a finer mesh or just opted out completely?

Your point still stands, but the orange car may well be a photo of an actual car. It's just not of a production model. It's likely the a photo of the same pre-production concept car shown at the Paris Motor Show. It had the "solid" mesh:
At any rate, it was a concept car that likely didn't even drive. Production cars don't have McLaren logos in their tire treads, either.

I think it's a rendition of the prototype. The production cars probably got the mesh that will actually aid cooling.

Oh, I have no doubt that all of the production cars have the flow-through mesh. I imagine that the only reason the concept's was solid was in order to hide the messy, unfinished, and incomplete mechanicals.

After examining at the original 8176 x 6132 pixel image and others in the same set ( source ), I still think it's a photo. Heavily retouched, of course, but a photo nonetheless.
That's not to say McLaren strictly uses photographs. For instance, this is obviously CGI.

The top photo you have shows the Mclaren P1 CONCEPT car. As with all concept cars, things change for production. Along with the mesh used, take a look at those tires, also the marker light on the rear wheel well.
